- Mientras se forma la bechamel, precalentar el horno a 200 °C.
- Limpiar los champiñones, retirando con un cuchillo de punta fina la lámina formada al rededor del tallo, dejando ver los filamentos oscuros del champiñón. Y retirar el tallo, (Si son fresco es fácil retirarlo con la misma mano), formando con el propio champiñón una especie de cacuela al ponerlo boca abajo.
- Colocar los champiñones limpios sobre una bandeja de horno con una base de papel vegetal o de horno.
- Salpimentar los champiñones levemente. (No añadir grasa, pues el propio agua del champiñón, y la grasa del condimento seran suficientes para que estén jugosos y no empachen).
- Picar muy menudo el beicon y colocarlo dentro de los champiñones.
- Colocar con ayuda de una cuchara bechamel hasta cubrir llegar al borde de los champiñones sin derramar.
- Espolvorear un nido de Queso para gratinar sobre cada champiñón.
- Meter con cuidado la bandeja con los champiñones rellenos en el horno. Bajar la temperatura a 180 °C, y cocinar durante 15 minutos en modo ventilador y con la resistencia superior para el gratinado.
